The 2001 and 2002 vintages were excellent for the Shiraz variety as the yields were moderate, vine health was excellent and the 'break of season' held off until harvest was over.
Both the 'Robert Henry 2001 Shiraz'(Sold Out) and the 'Burglar Bill 2002 Shiraz' were aged in oak for 12 months and rested after bottling for 2 months. The wines, while in oak and bottle, are fully protected from heat damage as they are stored in a cool room between 17 and 21 Degrees Celcius.
This constant temperature helps the wines to stabilize and ensures that they remain fresh and in peak condition, ready for transfer to the consumer.
The 2002 Burglar Bill Shiraz is ready to drink now or can be cellared for 5-10years. It is a well balanced wine with excellent structure and length of pallet. There is only a very limited amount of this wine still available for sale.

Merlot is a fantastic variety for the Pemberton region. It has loose bunches, small tough berries and a healthy, big leaved canopy with a propensity to crop low. The big leaves around the bunch zone protect them from the sting of the hot summer sun then in early autumn we remove them as ripening begins. This area of vineyard is deep/dry loam gravel which leans towards the east and as the sun rises, the reflection off the water warms the site. When working in this block exposing the bunches, the brightness and early morning heat are noticed by all especially as the mornings are cooling moving into autumn.
Careful sampling of the berries for a targeted flavour profile is absolutely paramount as the wine is mostly made in the vineyard. When the flavour profile is right we study the weather forecasts and make a decision on a harvest date. Our team consists of friends and relations and the small parcel of fruit is hand picked, crushed and de-stemmed before lunch. Then its all up to the wine maker.
This wine was made from exceptionally clean fruit from relatively young vines which is very promising and more outstanding vintages are eagerly anticipated.

Tasting Notes: Merlot is one of the noble grape varieties of the Bordeaux region in France. It is the grape variety that produces enticing characters of creamy texture and plum fruit.
This wine displays these fine attributes that are complimented with well integrated French oak and well structured tannins.
Enjoy with grilled lamb and meat casseroles. Also, enjoyed on its own.

The 2005 season was a difficult one for chardonnay with significant rain events around harvest time. Fortunately, careful vine canopy management at Olde Eastbrook, ensured ventilation and quick drying of the bunches which successfully prevented infection.
This small parcel of fruit was picked by hand on a cool morning and immediately whole bunch pressed ensuring the retention of flavours, clarity and cleanness. A sensational block of vines and a superb drink on a warm summers night.
